How can I tell if a guest has unsubscribed from receiving our emails?

It's not common, but it happens.

The easiest way to see that a guest has unsubscribed is from your guest list.

Navigate to Guests > Guest list. Note the column with the icon shown below:

If a guest unsubscribes, this icon will be red.

You can also see when it happened in the guest's Activity timeline:
